I whipped up this tasty side dish last night and used it as a bed for wild salmon. I added the edamame to "stretch" the pasta and add some nutrition to it.
1 tbsp canola oil
1/4 red onion, finely diced
1 tbsp sun dried tomatoes, julienne style in oil
Cook until onions are soft, break up the tomatoes with a spatula as they cook
1 cup orzo
1 can chicken broth
add to onions and simmer until the orzo is cooked, add water if needed
Salt/Pepper/Garlic Powder to taste
1 cup shelled edamame
Add to cooked pasta, stir, warm up edamame, serve
