Recipe: Homemade Pita Pockets

It's been a long time since I've tried my hand at baking! But due to my lack of menu planning lately, I found myself in a bind for dinner last night. I had bought the ingredients for Homemade Hummus last week, but I didn't have any pita bread to go with it. Since my MIL was over entertaining the kids, I decided to try to make them.




I used the recipe that I found here, but I used Ultragrain flour instead of white (hence the brown color). I also did not add the salt in the first few steps, as I seem to have issues with getting my bread to rise and someone once told me that salt inhibits yeast. Instead, I sprinkled some salt on top of the dough after it was rolled into rounds.

They turned out pretty well! It was fun watching them puff up into air balls in the oven. They did come out a little thin - I have no spatial intelligence, and don't cook with a ruler, so I suspect that my rounds were larger than 6 inches in diameter.

I didn't love them, but I suspect that it's due to the South Beach Diet and just no longer having any desires for bread and things like that! My husband said they were good and the kids also enjoyed them.
