I literally stood in my kitchen this morning waffling about what to do. I was out of Bagel Thins and veggies! I've been really good about not eating out lately, so buying breakfast at the cafeteria wasn't too appealing.
Enter my new favorite breakfast: Egg White, Spinach & Tomato Sandwich (open faced)
This was created in my little kitchen at work - all you need is a toaster and microwave!
Toast bread lightly, spread with laughing cow wedge.
Separate egg whites into a paper coffee cup, add a tiny splash of hot water from the coffee machine, whisk with a fork. Microwave for 1 minute.
When eggs are done, add a handful of baby spinach to the cup, microwave for 30 seconds to wilt spinach.
Top bread with spinach, egg whites, and 1 sliced roma tomato. Season to taste (I added several shakes of Cholula after the picture was taken).
Served with a big cup of coffee with a splash of creamer, this breakfast came in at 224 cals, 5g of fat and 17g of protein! I used Earthgrains Wheatberry bread.
