Prudent Produce Recipes 6/25/12

I am so excited to share this zucchini recipe with you this week! I made it a couple weeks ago and it was so good. Please enjoy these lighter, summery fare recipes this week. Remember you can always find prior week posts on Pinterest.

Southwestern Salad with Avocado-Lime Dressing
Southwestern Salad with Avocado-Lime Dressing - about once a week I hit up the salad bar at my office cafeteria - lately they have had corn, and I have been loving it on my salad! Is there any fresh (local) sweet corn out yet? Once in California visiting my dad, he cut corn off the cob - raw - and added it to a salad. I thought raw corn would be aweful, but it was so sweet and fresh it was perfect! This salad is perfect as is (although I would leave out cilantro and sub black beans for pinto) - but you could add grilled chicken or fish if you want more protein.


Veggie Ribbon Pasta - I have been trying to trick myself into less pasta - because I love it and could eat several servings in one sitting! Making ribbons out of the zucchini and carrots mimics the feel of fettucine without the carbs or calories. Lightly sauteed with plenty of garlic and finished with a crunch of pine nuts - I really loved this one!

Kohlrabi & Radish Slaw - did you know that kohlrabi and radishes are best friends? Apparently they are, as I found so many recipes pairing these two ingredients! Here is a new twist on slaw. If you don't have a food processor with a shred accessory, just use a big grater to shred the kohlrabi, radish, and carrots.








Parsley Tabbouleh
Parsley Tabbouleh - If you haven't been to Open Sesame in the East Village, you have to try it out. It is so good! That is the first time I have ever tried tabbouleh - and it is such a nice, fresh, healthy tasting dish. Eat as a side dish, add it to a wrap, or use as a bed under a piece of grilled fish with a citrus glaze.












Pesto Gnocchi with Green Beans - I feel like I always just steam green beans and serve them with a little olive oil, salt, and a lot of garlic powder. I never think to put them into a dish. I like to use frozen gnocchi that I can find at Hy-Vee, either with the frozen ravioli/pasta, or near the frozen potato products. There are also some shelf stable products, in the dry pasta aisle, but I haven't tried those yet.













Kohlrabi Home Fries - if you don't have the flours listed in the recipe, use regular flour with a little sprinkle of corn starch. I have only ever tried kohlrabi diced up and cooked like home fry diced potatoes - they were great, so I imagine they would be a great stand in for baked oven fries as well.
Blueberry-Peach Ice Pops Recipe
Peach and Blueberry Raspberry Creamsicles - so the original recipe calls for blueberries, but you could use your raspberries, pluots, or oranges in this recipe! I need to clean out my freezer this weekend to make room for popsicle molds. I have been coming across so many great recipes for frozen treats! You can always sneak in some protein powder or a little Greek yogurt into the mix if you want to up the health factor.
