I can't believe the year is officially half over! Our recipes these week fall outside the traditional American fare. If you stick to the standard meat/potatoes/side of veg dinner plate, try going outside your comfort zone! The last couple months, I have moved away from more complicated recipes, it's so easy to just cook up a steak/chicken breast/veggie burger while potatoes bake in the oven and throw a side of raw baby carrots on the plate. Now that our evenings aren't quite so busy, I am trying to fall in love with cooking all over again.

Super Eggplant Sub - I remember making this years and years ago for my husband, at the very first house we lived in. He worked weekends, so I would watch the Food Network all day, and Rachael Ray was one of the ways I started learning to cook. She made it so accessible to me. Take the time to find the Muir Glen fire roasted tomatoes, they make this sandwich - also use the fresh mozz, not the block or shredded kind!
4th of July Strawberries - how cute are these?? Hopefully the blue sugar is easy to find. I kind of skip that whole baking aisle. Unfortunately, Rachael Ray is an admitted failure at baking - since she taught me how to cook, so am I! I have dipped strawberries before, so I echo the tip to make sure they are completely dry.
Kadhai Paneer - I get Paneer at the international grocery store that is in the office complex at 75th and Douglas. You can buy little packages of it in the freezer - literally, it's a tiny hole in the wall store, and they have a freezer with a list of what's inside, just reach in and grab it. I have most Indian spices on hand, but always leave out asafetida and fenugreek as I am not familiar with the flavors, nor have I seen them.
Summer Squash & Chive Pancakes - check out this light side dish courtesy of Skinny Taste. These would be yummy alongside a fresh salad or meat and veggies cooked on the grill. I love the flavor of fresh chives!
Lemon & Avocado Butter Lettuce Salad - this is a raw foods recipe, but you could always sub in real parmesan and your favorite vinaigrette dressing if you don't want to go the raw/self-made route. I love the pretty presentation of this salad! A few weeks ago I had a salad with nori at Fresh Cafe, and it was delicious - such a healthy addition to a salad.
Kiwi Salsa - I see so many uses for this recipe besides chips and salsa! This would be a great topping to grilled chicken or fish. You could make sweet tortilla chips by sprinkling cinnamon and sugar on tortillas and grilling or baking them. Top some lettuce with this salsa for a quick side dish, or top a crostini with it for an elegant appetizer.
Frozen Banana Bites - Make this even easier by putting the banana on a popsicle stick or kabob skewer. Let your imagination go wild with the toppings! My latest obsession for snacking is smoked almonds....I think chocolate and smoked almonds would be delicious!
Any big 4th of July plans?
We are running in the Urbandale 5k/kids mile/tot trot, then watching the parade. We were supposed to go to my mom's but now she's headed out of town. So we are looking forward to a low key afternoon/evening to ourselves!
