Prudent Produce Recipes 7/16/12

Thanks for your patience with the late post - I'm excited about the menu this week! Bringing back a couple faves from Veganomicon.

Here is what I expect in the standard bin from Prudent Produce this week. As always, you can find prior week posts on Pinterest.

Standard Menu


1-Cantaloupe Melon
4-Dapple Supreme Pluots
2-Valencia Oranges
1-Sugraone Seedless Green Grapes (lb)
4-Bananas
1-Romaine Lettuce
1-Cucumber
1-Red Bell Pepper
1-White Mushroom (.5lb)
1-Jumbo White Onion
1-Broccoli


Valencia Salad with Oranges, Serrano Ham and Manchego Cheese 4
Valencia Salad with Ham and Manchengo Cheese - this takes a little more time, but would be a different and beautiful starter to a meal with friends and family.


Dr. Oz's Baked Onion Rings - I was in the gym a couple weeks ago watching Dr Oz, and the topic was sensible snacking. This super easy baked onion ring recipe was one of the featured snacks, and the gal that tried them didn't look like she was lying as she tasted them and raved about them!

Barley Greek Salad - hmmmm, I don't see cucumber in the ingredient list, but I see it in the picture? So just go ahead and throw it in there! You can also toss in chopped romaine if you want to bulk up the volume - I really love barley, but it is a grain, dense, and it doesn't take much for the calories to add up.

Spinach/Potato Blintzes with Mushroom Gravy - I was just thinking about this meal this morning as I was making pancakes. If the vegan crepe recipe has an onerous ingredient list, just swap in your favorite crepe recipe. Or just make the gravy and smother your favorite protein with it - or noodles, a baked potato - it is so good!





Pasta Della California - the avocado in this one gave me pause, but it turned out really well. I prefer my avocado in a salad, wrap or guac rather than warm, it is just as good a dish sans avocado, in my opinion.











Red Bell Pepper and Spinach Strata - I haven't made strata in a while, but it is a yummy twist on egg casserole! This is a recipe that is good for breakfast, lunch or dinner.
