Prudent Produce Recipes 7/23/12

Remember that you can always find prior week's recipes on Pinterest!

Next week I won't have a menu up as we are traveling to Baltimore for the USATF Junior Olympics National youth track and field championshipd - my 7 yr old is competing in the 800 and 1500m races! We are so proud of him.

This is what we can expect in the Prudent Produce standard bin this week:

Standard Menu
3-Packham Pears
4-Kiwi
1-Kent Mango
3-Donut Peaches
1-Strawberry (lb)
4-Bananas
1-Green Kale (local)
3-Russet Baking Potatoes
1-Baby Carrots
1-Zucchini
2-Green Bell Pepper

Banana Pecan Crepes - you could sub in almonds, hazelnuts, cashews for pecans if you aren't a pecan fan. I was scared the first time I made crepes, I had this notion in my head that they were so hard! I did mess up the first one I tried, but after that it was no problem. For a decadent filling, mix together equal parts cream cheese + nutella (or peanut butter, jelly, melted chocolate) - possibilities are endless!


mango on sticky riceMango on Sticky Rice - I love Thai sticky rice - try this as an outside the box dessert - or sweet afternoon treat!







Rotini with Smoked Sausage and PeppersPasta with Smoked Sausage and Peppers - while I am a vegetarian, my kids and husband are not, so every once in a while I "treat" them and provide a meal with meat in it. They are good about most vegetables, but peppers aren't one of them. I find if I pair an undesirable veggie with a special food like sausage, they are more likely to eat it without complaint.


Miso Soup with Tofu and Kale - miso soup is one of those things that has grown on me over time, and now it's one of my favorite parts of a sushi lunch. This recipe swaps out seaweed for kale.









Crispy Baked Cheesy Zucchini Fries
Zucchini Fries with Sriracha Lime Mayo - I love a spicy mayo dip - but you can healthify the dip by substituting plan non fat Greek yogurt for all of some of the mayo. You could also substitute Cholula or chilis in adobo for the Sriracha if you have that on hand instead, or a healthy dash of cayenne pepper.








Fancy Fanned Potatoes - great twist on the traditional baked potato, with lots of yummy flavors baked into the fans.
