Prudent Produce Recipes 8/20/12
Another busy work week. Week 2 of the 100 days challenge was real beverages, I have to say I had more diet soda this week than usual! I am redoing week 2 again this week, it was a highly unusual week in terms of work load, deadlines, stress, family visiting, etc. Cutting myself some slack and realizing I can give it a better effort.

Standard Menu
2-Fuji Apples
1-Seedless Grapes (Red or Green)
4-Elephant Heart Plums
1-Kent Mango
4-Bananas
1-Red Leaf Lettuce
1-Cucumber (local)
2-Tomatoes (local)
1-Celery
1-Baby Bok Choy (local)
1-Green Onion bunch
Creamed Spinach Stuffed Tomatoes - two of my favorite things in one! I love creamed spinach and tomatoes would be a great complement to the oozy, creamy spinach.
Green Onion and Cheddar Spoonbread - Bam!! Check out this easy, cheesy, eggy spoonbread recipe courtesy of Emeril. Great for Sunday brunch, or to accompany a hearty salad for dinner meal.
Crisp Lamb Lettuce Wraps - sub in your red leaf lettuce in place of the Boston lettuce. You could use any ground meat, but lamb will be your most authentic Greek option. I have been able to find ground lamb at Hy-Vee before, they don't always have it, so you may want to call ahead to any store you hope to get it from.
Mango Smoothie Pops - super easy recipe - and I need to go check out these volcano pop things to see what they are all about!
Soy Glazed Salmon with Sesame Noodles and Bok Choy - I make fish for the fam once a week, and usually make salmon the same way every time. Here is a fun Asian take on salmon.
