I'm excited to also share with you a blog that has created a 100 days of mini pledges around healthy eating. Obviously you are already on a healthy eating path, but I know I can always do better - for example I don't eat nearly enough fruit. I'm starting Week 1 on Monday, the challenge that week is to eat 2 fruits and veggies with each meal! 1-Carrot w/tops
1-Yellow Squash (local)
1-Zucchini (local)



Grilled Yellow Squash and Zucchini Pasta Salad - smoky flavors of grilled veggies tossed with cold pasta and topped with the crunch of pine nuts. Great side dish to a barbeque.
Grilled Pork Tacos with Summer Corn and Nectarine Salsa - I love fresh salsa's! Vegetarians can sub out the pork for tempeh
