Prudent Produce Recipes 8/6/12

It's nice to be back from vacation and back into a routine! Remember that you can find previous recipe posts on my Pinterest board.

I'm excited to also share with you a blog that has created a 100 days of mini pledges around healthy eating. Obviously you are already on a healthy eating path, but I know I can always do better - for example I don't eat nearly enough fruit. I'm starting Week 1 on Monday, the challenge that week is to eat 2 fruits and veggies with each meal! This is what I am expecting in my bin from Prudent Produce this week:

Standard Menu:
3-Bartlett Pears
2-Braeburn Apples
3-Nectarines
3-Black Plums
3-Kiwi
4-Bananas
1-Romaine Lettuce
1-Stripetti Squash
1-Carrot w/tops
1-Yellow Squash (local)
1-Zucchini (local)
Tuscan Bread Salad - I love this salad so much! Throw in all your favorite ingredients for a twist on the basic recipe - start with romaine, beans and bread - then add my favorite avocado, tomato, and onion. Go Greek with olives, feta cheese and artichoke hearts. The possibilities are endless!





Grilled Zucchini Pizza Slices
Grilled Zucchini Pizza Slices - what a great way to get kids to eat zucchini! If they are not usually zucchini fans, top it with your favorite pizza toppings and see if the pepperoni and cheese will entice them.

Black Plum Clafoutis - I have never tried a clafoutis, but I love custardy desserts. This recipe looks super simple to throw together!


Stripetti Squash Au Gratin - from what I have read, stripetti squash is a little sweeter, slightly less stringy version of spaghetti squash. The delicate skin can be eaten. This au gratin stuffs the squash with lentils, spinach, and Italian seasonings and flavors. Meat eaters can replace the lentils with ground turkey or beed.

Grilled Yellow Squash and Zucchini Pasta Salad - smoky flavors of grilled veggies tossed with cold pasta and topped with the crunch of pine nuts. Great side dish to a barbeque.

Grilled Pork Tacos with Summer Corn and Nectarine Salsa - I love fresh salsa's! Vegetarians can sub out the pork for tempeh
