Roasted Cauliflower

This is one of my favorite go-to side dishes. Super easy and healthy - and most of all - tasty!


I take a whole head of cauliflower and chop into florets - bite size. Throw all of it in a large baking dish - it's best to have just a shallow layer of cauliflower so it browns and caramelizes instead of steams. Add a couple tbsp of coconut oil, and mix well.

Throw in the oven @ 450 degrees. Roast for 30 minutes, stirring the cauliflower every ten minutes or so. You want nice, brown crispy edges.


When it comes out of the oven, hit with salt, and some grated parmesan (either fresh grated with a microplane or the canned powdered stuff).

Honestly, I can eat a whole head of this stuff myself!!
