This blog has evolved from an online diary to something I've found myself to be truly passionate about: healthy living and eating! I'm your typical mom of two, trying to lose that extra ten pounds, and get more nutritious foods into my kids. If you are just embarking on a healthier lifestyle, start with reading "Healthy Child, Healthy World". It will change your life!
I'm not sure this picture could get any uglier, the lighting in my office this morning certainly didn't help!!
We've been out of town, so I cancelled my produce deliveries for a couple weeks, and won't get one until next week. I have also decided that I am getting back on my budgeting bandwagon, I have been slacking the last few months. So dinners this week work around what's in the pantry and I kept my shopping list modest.
Last night we had taco night, so I cooked up onions and peppers, ground beef for the carnivores, and some tempeh that was in the fridge with a 7/28 sell by date - I figured it was still safe!! I really like the Trader Joe's organic 3 grain tempeh. I haven't tried any others though for comparison :)
I did the veggies in a little coconut oil with salt, the tempeh I diced up, browned in a pan with a little coconut oil, then added red pepper flakes, cayenne, and a spice blend I picked up at farmer's market. I threw some water in there to get it to simmer and blend all the flavors, cooked, stirring, until the water was gone.
Since I was out of eggs, but not out of my breakfast staples of bagel thins and Laughing Cow wedges, and didn't want to buy breakfast (see above re: budget), I decided to swap out my typical egg whites and veggies for the tempeh and veggies!
It was so good, hit the spot, and will hopefully tide me over until we go out for a birthday lunch at noon.
