I'm not sure this picture could get any uglier, the lighting in my office this morning certainly didn't help!!
We've been out of town, so I cancelled my produce deliveries for a couple weeks, and won't get one until next week. I have also decided that I am getting back on my budgeting bandwagon, I have been slacking the last few months. So dinners this week work around what's in the pantry and I kept my shopping list modest.
I did the veggies in a little coconut oil with salt, the tempeh I diced up, browned in a pan with a little coconut oil, then added red pepper flakes, cayenne, and a spice blend I picked up at farmer's market. I threw some water in there to get it to simmer and blend all the flavors, cooked, stirring, until the water was gone.
Since I was out of eggs, but not out of my breakfast staples of bagel thins and Laughing Cow wedges, and didn't want to buy breakfast (see above re: budget), I decided to swap out my typical egg whites and veggies for the tempeh and veggies!
It was so good, hit the spot, and will hopefully tide me over until we go out for a birthday lunch at noon.

Hmm, this sounds good but not sure about the tempeh?? I'll take your word and maybe brave it soon...
