Prudent Produce Menu 10/1/12
I can't believe it is already October on Monday! Bring on fall, I am cooking up some vegetarian chili tonight.

This is what I am expecting from Prudent Produce this week:
Standard Menu
3-Gala Apples
2-Bartlett Pears
1-Pomegranate
1-Thomcord Grape (lb)
4-Bananas
1-Red Leaf Lettuce
1-Cucumber
1-Green Bell Pepper
1-Leek (~lb)
1-Spinach bunch
1-Artichoke
Baked Salmon with Cucumber Dill Sauce: I usually whip up an easy sauce of mayo, white vinegar, mustard and dill. I rarely eat salmon myself, and I don't worry too much about calories with the three skinnies I live with. This looks like a refreshing and much lighter alternative though!
Pear Custard Tarts with Pomegranate: I am not at all a baker, so I would opt for purchasing the tart shells. What a pretty dessert!
Breakfast Casserole with Leeks, Spinach, Artichokes & Goat Cheese: I am not a goat cheese fan, but you could sub in feta, or just about anything. I think this would also be tasty with some vegetarian sausage mixed in.
Steamed Whole Artichoke with Roasted Beet Hummus - roasted beet hummus? Why have I never heard of this before!! I like to reduce the oil and tahini in my hummus, replacing the liquid with unsweetened coconut milk to thin it out.
Tuscan Bread Salad - my all time favorite salad. It just is. It is so filling, healthy, comforting, and tasty all at once! Is it weird that I eat my salads out of mixing bowls?? A regular bowl just isn't big enough.
Artichoke & Spinach Stuffing: this recipe calls for canned artichokes. I'm not sure how I feel about the brie in this recipe, I'm on the border about brie. You could sub in any favorite cheese though.
Do you eat any meals out of weird containers?
A regular sized salad makes me starving half an hour later. I need the volume!!
