Prudent Produce Menu 9/10/12

Did everyone enjoy their 3 day weekend? We had great running time, family time, and hang out and watch movies time. Exactly what a holiday weekend should be!

This is what I am expecting in the Prudent Produce bin this week. Remember you can find past recipe posts on Pinterest.

1-Honey Dew Melon
2-Nectarines
4-Kiwi
4-Bananas
1-Romaine Lettuce
1-Cabbage (local)
1-Spinach
1-Grape Tomatoes (pt-local)
1-Green Bell Pepper (local)
1-Shallots (.25lb-local)
1-Red Radish bunch (local)

Greek Omelet with Feta recipe
Greek Omelet with Feta - I really love breakfast for dinner meals. Serve with a side salad, hummus and toasted pita bread.

Honey Dew Mousse Cake - ok, if anyone actually makes this, I will bow down to you! I couldn't even read through all the directions because I lost focus. But I think it looked like such a unique and interesting cake that I just had to share!

Fish Tacos with Pickled Red Onion and Radish Salad
Fish Tacos with Pickles Onion, Radish and Salsa Verde - use your favorite white flaky fish or try salmon! Don't let the ingredient list scare you off - there are a lot of ingredients in the homemade salsa verde, just throw it in the blender.

Fresh nectarine and gorgonzola pizza recipe
Fresh Nectarine and Gorgonzola Pizza - I think this would be a unique starter for any fall barbeque, or for a relaxing evening sitting on the deck with a glass of white wine.

Ramen Cabbage Salad Recipe
Ramen Cabbage Salad - disclaimer - this is not all that low in calories! My mom used to make this all the time. I love the crunch of this salad. In addition to the sunflower seeds, my mom also added 1/2 cup of sliced or slivered almonds.

Potato Herbed Foccacia with Caramelized Shallots - this takes me back to my days working at Des Moines Golf & Country Club. They would make their own foccacia bread for the fine dining room. I love the rustic texture of foccacia, serve this up with a soup or salad meal. You can skip the video and keep scrolling to the bottom for the recipe.

Vegetarian Stuffed Bell Peppers - stuffed bell peppers - in the crock pot! I love the idea of coming home to this smell of these spicy flavors in the kitchen.
