Prudent Produce Menu 9/17/12

Here is what we are expecting in the bin from Prudent Produce this week:

Standard Menu
3-Gala Apples
1-Keitt Mango
2-Valencia Oranges
2-Red Bartlett Pears
3-Joanna Red Plums
4-Bananas
1-Green Leaf Lettuce
1-Red Beet (local)
1-Baby Carrots
1-White Mushroom (.5lb)
1-Sugar Snap Pea (.5lb)
Crispy Fish with Mango Slaw
Crispy Fish with Mango Slaw - I can't tell from the pictures if they are deep frying or just pan frying. I would pan fry with just a thin layer of oil in the pan. Or to go even lower fat, you can spray with Pam or spritz with an olive oil sprayer and bake the fish. Tilapia would be another good option if you can't find mahi.

Roasted Baby Carrots with Herbed Mustard Butter
Roasted Carrots with Herbed Mustard Butter - I tend to make carrots sweet with a little brown sugar. This sounds like a tasty alternative to my usual preparation!

Stir-Fried Tofu with Mushrooms, Sugar Snap Peas, and Green Onions
Stir Fried Tofu with Mushrooms & Snap Peas - use your buttom mushrooms in place of the shiitake. You could sub beef, chicken or pork for the tofu.

Roasted Beet Salad - my favorite item on Biaggi's menu, I went on a quest for the recipe and was lucky to find it published in an Illinois paper!





Cheddar and Mushroom Breakfast Dinner Squares - We generally are cereal, oatmeal, or pancakes (weekend) eaters, so I like to make breakfast type dishes for dinner on occasion. They are generally easy and fast.




Is everyone feeling as crazy busy and overwhelmed as I am?

Between school starting, launching a youth cross country program, and work, it can be a real struggle to stay on top of eating and living healthy. I've been keeping a spreadsheet where on Tuesdays I build my grocery list (based on HyVee's sales) and keep a running list of food items that I need to use (Prudent groceries) and recipes to make for the week. Nights we have practice I keep it easy - a piece of fish, an easy side dish and sweet potato puffs. I save more complicated recipes for the weekend, and we have at least one night of leftovers.

I focus on eating well first. Then laundry. My house, on the other hand, is a giant mess these days!

How do you manage / prioritize your time when life gets hectic?

I made the breakfast casserole and pancakes for dinner last night since the kids would only eat a few obligatory bites of the casserole. They were both very good, I would have put a little more sugar in the pancakes and eaten them plain but very good!
